Italian Sausage Biscuit Burgers

In our home, we have been working to get out of a food rut (I blame it on our move). This means being a little more creative not only to eat even more of a variety, but also to make sure our toddler is eating a variety. So with just a few ingredients we had on hand, we made some quick and simple Italian biscuit bites and spiced it up with some tarragon our new neighbor Peggy gave us from the community garden!

So whether you’re just looking for a new recipe using Italian sausage, or you’re trying to use up the leftovers from your party or grilling out, these are a delicious solution to your problem. Plus, they are a fun cooking project to actually make with the kids as well!

How to make delicious Italian Sausage Bites

What you need

  • 1 pound of Italian sausage – loose or “de-cased”
  • 1 can of large biscuits or your own biscuit batter
  • Tarragon

Either make your own biscuit batter from my previous recipe that I linked or buy a can of giant biscuits. My personal favorite are the immaculate biscuits if I am buying and not making from scratch.

You will spread out biscuit batter into 3 inch circles that are 1/8th to 1/4 inches thick.

Place 2-3 tablespoons of Italian sausage onto each biscuit.

Add desired amount of tarragon on top.

Pull the sides of the biscuit up and around the sides of the meat, sealing the meat inside of the biscuit. Sometimes I have to twist it a little bit. Then place each finished Italian sausage biscuit upside-down on your baking sheet. I personally like using a pizza stone, because I like the crispiness it gives the end product.

Bake at 375 for 20 minutes or until completely golden around the entire biscuit.

Let them cool for a few minutes and ENJOY!
