I really hate beets. They taste like dirt and look like blood, so when I opened up my produce subscription box and saw that I literally had 8 pounds of beets, I was more than just bummed, I was actually kind of angry.
After 86 comments on my facebook profile of different ways I could use them, we decided our first venture was going to make ooey gooey beet brownies.
Because chocolate is known to cover a multitude of sins.
Even beets.

I found a bunch of recipes, but in the end I came up with my own concoction because either I didn’t have what something called for, I wanted to make a different amount, or something random.
Red Velvet Beet Brownies from scratch
- 13×9 inch pan
- 3 sticks of butter
- 2.5 cups of white sugar
- 1.5 cups cocoa powder
- 3/4 teaspoon salt
- 4 eggs
- 1.5 teaspoons of vanilla
- 2 cups of beet puree {I made from scratch using 3 large beets that I cooked for 21 minutes in my instant pot, peeled, and put into our blender with 1/2 cup milk and half a lemon squeezed in.
- 1.5 cups flour
- 1 teaspoon baking powder
- {Optional} chocolate chips

On the stove, heat up two of your sticks of butter. Let it come to a boil, continuously mixing. Once it starts to change colors slightly, pull it from the stove and pout it into a large bowl mixed that already has the cocoa, salt, and sugar blended together.
Beat in eggs, only if the mixture is cool.
Add the rest of the ingredients to the mixture, making sure you stir it together well.
The final stick of butter is simple to grease the pan. I use it in its solid state to coat the bottom and edges. And mine came out perfectly.
Place brownies in a preheated over of 325 degrees and cook for 40-50 minutes or until you can insert a toothpick and remove it cleanly.
If you want to cook two batches in 8×8 pans, reduce time to 25 minutes.
Serve and enjoy. They are incredibly fluffy and my kids kept saying “I can’t believe there are betts in this!” while my husband mentioned that it’s only a subtle flavor. And me? I ate them. I could taste the beet because I knew it was there, but found them to be surprisingly delightful.
