No Bake Protein Ball Recipe without added sugar

As I was loading up our shopping cart with quick and easy foods to eat that didn’t have added sugar in them and were healthy for our family, my husband suggested that we try to make our own no bake protein ball recipe or experiment to find an energy bite recipe we loved. So we gathered up dates, prunes, nuts, and more to try out some options with our kids.

When we started the Whole30 challenge, we set out to eat clean on a budget. So while we loaded up on things like Larabars. And while they’re delicious, it was so easy to make a substitute that both my kids and my husband would love, that cut our costs.

And since I don’t even have to bake them, it’s not a time-consuming process.

Plus I think my toddler and preschooler like them even better because they come in little bite-size ball form and not a wrapped bar.

Easy Homemade Energy Bite Ingredients

1 cup of chopped prunes
2/3 cup nuts (I used cashews but I also love macadamia nuts)
Shredded coconut to roll them in

How to make Sugar free No Bake Protein Balls

First, in a food processor, chop up the nuts until they’re tiny. Don’t process too much or else they’ll turn into a flour consistency.  Not that it’s bad, but like many protein or energy bars, I personally prefer biting into these little goodies and still get that crunch from the nuts.

Next add the prunes and the coconut flakes. You can also substitute the prunes for dates if you’d like. I have made them both ways.

Process again until they’re all uniform and turn into a large ball, like the photo.

In a bowl pour about 1/2 cup of shredded coconut.
Gather a couple of wet towels.   Rub your hands with the wet towels and measure about a golfball size of the mixture in your hands.  Damp hands help the prune mixture not stick.

Roll each ball in the shredded coconut. Makes about 12 – 14 or so balls.  You can store them in the fridge for about 5 days. That is if you have any leftovers.
