Easy to make spinach zucchini party snack bites

Baked Zucchini Ball Recipe Ingredients

1 egg
2 cups Zucchini, shredded
1/2 cup spinach, chopped
1 cup panko
1/4 cup parmesan cheese
1 clove garlic, minced
1 Tbsp Ranch seasoning (optional – find a Whole30 and Paleo friendly version here)
salt/pepper

How to make easy spinach zucchini finger food for a party

Preheat oven to 350.
First, in a skillet with a little bit of olive oil, saute the zucchini and the spinach in medium heat.

Keep stirring until all the liquid from the zucchini has evaporated – this takes about 10 minutes but could vary. Add the garlic and cook a bit more until it’s fragrant and your neighbors can smell it. 😉

Making zucchini balls in a cast iron skillet
Put the zucchini mixture in a strainer and with a spoon I like to squeeze out any remaining liquid.  In a separate bowl add the rest of the ingredients and the cooled zucchini mixture.

Spray a cookie sheet with non-stick spray.

Mix everything together with your nice and clean hands. Form a golf-size ball and arrange them on the baking sheet.

Makes about 8 balls. Brush a little bit of melted butter on top of each one, or spray it with some of the non-stick spray.

Bake in preheated oven for 15 minutes or until they turn golden.  Half way thru the baking process you may need to turn them over so they don’t burn on the bottom.
Enjoy your Spinach Zucchini Bites and serve warm at your party or pack them up for a picnic and day at the park!

    Is there a way to make these without the bread? Almond flour?

    1. I would say use whatever you normally use as a substitute. you might even try something like tiny bits of apple or your favorite fruit. The egg is the caking agent ultimately. Or just leave it out completely 🙂

  2. Turned out great. I used yellow zucchini since it seems to have less moisture. I first put that in the pan to cook first and then turned down the heat and added the spinach so it would wilt slowly and not burn. Then let the mix cool a bit before adding to the other ingredints so they would not precook the egg when mixing. Also used trader joes everything about the bagal spice as the seasoning added a pinch of salt too.
