What easy Instant Pot potluck recipes can I make on the go?

In our house, summertime is a huge deal for gatherings and cookouts. I literally cannot express the excitement that I feel when I think about getting to spend the majority of our time eating in the great outdoors with our family and friends. There’s just something about good food, great conversation, and endless laughs that summertime is truly all about. And while gatherings and cookouts are a huge focal point of our summer months, that doesn’t always mean that I have a ton of time to plan something to take with us to contribute to those meals.

My go-to in times like this is my Instant Pot. No matter what timeframe I have, I can always create a delicious potluck recipe to have done in time that tastes delicious to share with our family and friends.

Instant Pot Potluck recipes for your next barbecue!

Not only is pressure cooking pretty stress free, but it makes planning for a potluck dinner or cookout that much easier. Many a time have we pressure cooked our dish while getting ready, grabbed it, and headed out the door. It takes literally hardly any time for recipes to be made from start to finish, but they’re so good.

My go-to loves when it comes to summer potlucks boil down to two delicious recipes: Instant Pot Chicken Wings and Instant Pot Orange BBQ Meatballs. No matter what, pure perfection each and every time I make them.

Pressure Cooked Chicken Wings

Not only do I love the ease of these Instant Pot Chicken Wings, but since my family and I have different taste buds when it comes to spice, it’s super simple to doctor them up a bit when they’re done cooking as well.

What you’ll need to make Instant Pot Chicken Wings

  • 3 pounds frozen chicken wings
  • ½ cup tomato sauce
  • 1 teaspoon dried ground coriander
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons honey
  • 2 tablespoons butter or ghee

Instant Pot BBQ Chicken Wings

In just a few moments, you’ll have delicious Wings for your get together

Place the wings in Instant Pot inner pot. This recipe calls for 3 pounds of frozen chicken weeks which usually means about 8 wings or so per pound (can vary depending on the size of wings).

Once those wings are in the inner pot, it’s time to mix the tomato sauce, dried coriander, Worcestershire sauce and honey together. Once mixed, pour over the top of the chicken wings. Add in the butter.

All that’s left to do at this point is set the valve to sealed and set the manual time to 6 minutes on high pressure.

QR and remove chicken wings with thongs and place them on a baking sheet. Place your baking sheet in the oven and broil on high for 5-6 minutes or until lightly browned or ‘grilled’ doneness has been reached. (If you are like me, you like some crunch to those wings!

Instant Pot Orange BBQ Meatballs

Instant Pot Sweet Orange Meatballs

What you’ll need to make Instant Pot Orange BBQ Meatballs

  • 24-ounce package frozen turkey meatballs
  • 1/3 cup orange marmalade
  • ¼ cup brown sugar
  • ½ cup apple cider vinegar
  • ½ cup honey hickory BBQ sauce
  • ½ cup water

In under 6 minutes, your turkey meatballs will be ready to eat!

No need to separate out any ingredients with this simple recipe. Literally, place all the ingredients inside the pressure cooker. Once added, turn the pressure valve to sealed and set manual pressure for 6 minutes.

How you choose to spend those 6 minutes of time while waiting for your turkey meatballs to be done is up to you. Sing a song, do a little dance, do something wacky and fun? Options are endless!

Once that 6 minutes is done, quick release the pressure and serve.

Pressure Cooked Buffalo Chicken Dip

This is such a great pot luck recipe to make in your instant pot because it can be used as just a dip or could even just be eaten as-is. Serve up the chicken dip with carrots, celery, chips, pretzels, or a variety of dipper options.

Ingredient list

  • 2-3 chicken breasts
  • 8 ounces cream cheese
  • 1 cup Sriracha sauce (use ½ cup Sriracha and ½ chili sauce for a milder dip)
  • 1 ½ cup cheddar cheese, shredded

Buffalo Chicken in your Instant Pot

This serves approximately 8 people.

  1. Combine all ingredients in the Instant Pot.
  2. Close the lid on the pressure cooker and turn the valve to sealing position. 
  3. Set to a manual high time for 15 minutes. When the cooking time has finished, do a quick release and shred the chicken.

Instant Pot Beef Taco Meat for a Pot Luck

One of our favorite potluck meals is beef taco meat. It’s so versatile because people can prepare it any way they like with toppings from sour cream and cheese to healthier options like diced tomatoes and cilantro.

We also like to give our guests options of chips, taco shells, tortilla, or even large lettuce leaves to make a healthier wrap. Again, it just serves people really well.

Beef Taco ingredients

  • 1 1/2 pounds ground beef
  • 1 ½ teaspoons salt
  • 2 teaspoons onion powder
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon cornstarch
  • ¾ teaspoon red pepper flakes
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • 1 cup water

How to make ground beef taco meat in an Instant Pot

This serves approximately 8 people.

  1. Using saute mode, brown ground beef in the Instant Pot. Drain grease and then add the remaining ingredients.
  2. Close the lid on the pressure cooker and turn the valve to sealing position. 
  3. Set to a manual high time for 10 minutes. When the cooking time has finished, do a quick release.
  4. Remove the lid and serve.
