Italian Sausage and Peppers Pressure Cooker Recipe

The time crunch was on. My husband would be home in 45 minutes and I didn’t even have a clue what I would fix for dinner. This was the same scenario for how the Pressure Cooker Chicken Florentine recipe was born.

It’s a mad dash the the fridge and turns into this stream of consciousness rambling going through my head…

“Think, Kara, think. You just went to the store and got… Italian sausage. Why did you pick that up? What on earth did you think you were going to make from it? Ok, let’s use it. With… wow, that’s a lot of bell peppers. Ok. I think we can make an awesome recipe from this.”

And VIOLA! A delicious Italian Sausage Soup-ish type thing was born. From incubation to dinner table, it was done in less than 30 minutes. And I feel like I could easily make it whole30 friendly if we start our 90 day nutrition plan again.Easy last minute Italian sausage dinner idea using the instant pot or pressure cooker! How to make one-pot Italian Sausage and Peppers in an Instant Pot

Though my husband has the hottest mouth on the planet (ha!), I’m a spicy food pansy. I always have been. When I was a kid, my parents would always grill out with Italian sausage, but I never knew that there was anything other than “light your mouth on fire” Italian sausage.

Anyways, all that to say, adjust this recipe according to your own preferences! I personally always make it with mild Italian sausage, letting family add spice if they so desire. It make everyone happy.

24 ounces Italian Sausage (loose or in patties)
4 cups sliced bell peppers
2 cups diced tomatoes
2 cups tomato sauce
1 tablespoon tarragon
3 cloves minced or sliced garlic
1 cup onion slices
Salt
Italian Seasoning

Simply add your Italian sausage in the very bottom of the Instant Pot and pile everything else on top. I typically add the tarragon  directly on top of the sausage and wait to use salt to taste before eating. I also usually wait to add the onions after it’s cooked because the heat still cooks them a bit, and I just prefer it that way!

If you set the pot to “saute” while you are adding ingredients, slicing peppers, and chopping garlic, it takes less time for the pot to get to pressure meaning less time before dinner is served.


Close the pressure cooker lid and set it to 25 minutes manual time and then QR to depressurize.

Use a spatula, or my new favorite kitchen tool, the mix n chop meat chopper to sort of grind the Italian Sausage into bite size sections.
